I come with bright tidings and warm, tasty treats! "How can she supply warm tasty treats via the internet?" you ask? Well, recipes, of course!
So, here are the tastiest cookies I've had in ages. And, with the exception of Whole Wheat Pastry flour, which you can get at your local whole foods or earthfare or whatever you enjoy, you should have the ingredients. So, here goes.
Ingredients:
3/4 cup of sugar
3/4 cup of brown sugar (tightly packed)
2 eggs
1/2 cup oil (vegetable or canola)
2 teaspoons of vanilla extract
1 cup all purpose flour
1 cup whole wheat pastry flour (yes, if your ultra lazy you can just do two cups of all purpose, but they won't be as good.. or half as healthy)
1 teaspoon of salt
3/4 cup of chocolate chips, I prefer ghirardelli dark chocolate chips, they're bigger and I'm a dark chocolate fiend, but whatever you have on hand will do fine.
Bakeage:
Preheat oven to 375 and line two baking pans with parchment paper.
Mix sugars, oil, vanilla, and eggs in a large bowl until fully incorporated. Whisk your flours, baking powder, and salt in until it just comes together. Do not overmix! Add chocolate chips and stir until they're evenly distributed.
Wash your hands and leave them wet for easy cookieball rolling. Use a tablespoon to make even sized balls our of your dough then using your damp hands roll them into nice balls. Place your cookies on the lined baking pans about two inches apart from eachother and bake for 11-15 minutes depending on whether you enjoy your cookies chewy or crunchy. Transfer them to a cooling rack or plate and wait a few minutes then enjoy with a tall glass of milk.
Delish. I'm telling you.
If I haven't already told the whole world, like I'm fairly sure I have, I'm going to college next year as a culinary major. So, if you guys like recipes I'll try to update my journal with a few every now and again.
Hope you're all doing well. Much love,
Nina
